Caramel filled cookies

Anyone that knows me, knows that this is my favourite time of year because #MKR is on. I love watching to see what and how other people cook, and the little tricks they do to help take their food to the next leave. Then I can try their recipes out or take different ones and add my twist to them, and that is just what I did with this recipe.

 

Alfajores Con Helado De Lucuma with a Vicky D's twist

After watching the first round of instant restaurants where Andy & Ruby made Alfajores Con Helado De Lucuma I knew just what I wanted to try. So the recipe calls for you to cook a can of condensed milk in the saucepan of boiling water. I remember mum doing this, it's how Mum & Grandma would make caramel for caramel tarts. I'm sure it's how a  many of you have made or remember caramel being made. As well I think everyone has a story of when that tin got too hot and had one hell of a mess to clean. Those stories have scared me from ever trying to make caramel that way and find it much safer and yummier to buy Nestle top 'n" fill Caramel.

 

Which brings me to the recipe and my twist. Watching these girls make these cookies I know right away that I was going to fill them with, my already safely made caramel. 

Ingredients

300g plain flour

170g butter

55g icing sugar ( plus extra to dust top)

Nestle tinned caramel for filling

1) Put your flour, butter & icing sugar in a bowl and mix to it come together.

2) Roll out between baking paper to about 5mm thick.

3) Cut out your cookies and bake in preheated oven for around 12-14 minutes. The oven should be on 150c.

4) When cooked pull out and let cool. When cool enough pipe your fill on & dust the top with icing sugar.

 

So how easy is that and you don't have to wait 2 hours for the condensed milk and risk it going all over the ceiling. Now if you are like me when making the cookies you might think this is more of a pastry recipe then a cookie recipe. So right after I made this recipe again and used it as the base to my Key Lime Pie. Yum worked beautifully and everyone said they liked it as the pasty base more than a cookie.
